You’ve probably seen it. Maybe more than once. It starts with someone plopping a block of feta cheese into the center of a baking dish, tossing in cherry tomatoes like confetti, drizzling it all in olive oil, and sprinkling on herbs with flair. Cut to the after shot: bubbly, golden feta surrounded by bursting, blistered tomatoes. They mix it all up into a creamy, saucy mess, toss in some pasta, take a bite and cue the over-the-top reaction.
